These cookies are so good (good for you too!) and really easy to make. All you need is one bowl and a few ingredients. Plus, they don't have any flour so they're gluten-free! They're perfect as a snack or something to help boost your energy before or after a workout because oats are packed full of fiber and nutrients.
I've been eating a lot of oats in different forms lately and this has got to be my favourite. Sharing the recipe below!
ONE BOWL VEGAN OATMEAL COOKIES
Makes 10 two-inch diameter cookies
Ingredients
4 small super ripe banana (makes 1/2 + 1/8 cup)
1 1/2 cup whole rolled oats
1/4 cup chocolate chunks (or chips)
1/4 cup chopped pitted dates (you can opt to use other dried fruit)
1/2 tsp cinnamon powder
A handful of pumpkin seeds (optional)
Steps
1. In a large bowl, mash the bananas. Add the rest of the ingredients into the bowl.
2. Mix well and then roll into balls before patting down into cookie shapes on a baking tray lined with some parchment paper.
3. Bake for 15 minutes at 350F. Let cool and enjoy!
Note: You can store these in the refrigerator for weeks at a time and have them whenever you need a good energy-filled snack.
