This creation actually reminds me of my childhood. Growing up I’d always see my mom cooking up a creamy carbonara, which my sister really loved. I can’t say I was the biggest fan of this super creamy pasta dish but I do like having creamy pasta every now and then!

The best part? This creamy carbonara is completely vegan and made with really simple ingredients. I can say it’s high in protein too!

So yes, get your pots ready and boil some water because it’s time to boil some spaghetti! Oh and get your blenders ready too because you’ll need them to create this creamy sauce!

Creamy Vegan Carbonara With Rice Paper Bacon Serves 3-4 INGREDIENTS 200 g dry spaghetti or pasta of choice

CARBONARA SAUCE

1 tbsp olive oil

4 cloves garlic, roughly chopped 1 onion, diced

1 tube (around 350g) silken tofu

1 tbsp calamansi juice or 1 1/2 tbsp lemon juice

1 tbsp nutritional yeast 2 tsp salt, or to taste

TOPPINGS (optional)

Rice Paper Bacon (recipe in my eBook)

Vegan Parmesan (recipe below)

Chopped Basil

STEPS

  1. Cook the pasta according to package instructions. Cook until al dente.

  2. While the pasta is cooking, heat a pan with oil. Sauté the garlic and onions until cooked. Set aside.

  3. Place the garlic, onions, and the other sauce ingredients in a blender. Blend until smooth, around 2-3 minutes. Feel free to adjust the seasoning depending on desired taste.

  4. Transfer the sauce into a pan. Add in the cooked pasta. Cook for 6-8 minutes over medium high heat until the sauce is thick.

  5. Serve immediately with vegan bacon, vegan parmesan, and basil if desired. Enjoy while hot!

VEGAN “PARMESAN” Makes around 1 cup

1 cup almond flour or meal* 4 tbsp nutritional yeast 1 tsp salt


1. Mix everything together then store in a jar/air-right container.

*You can opt to use raw almonds and process them until a flour consistency is reached to make your own almond flour/meal.
