A really easy chimichurri sauce that you can use as a dip, sauce, or even as a marinade! Also, it requires only a few basic ingredients. Chimichurri is actually a South American sauce that's usually used to marinate grilled meats! But in this case, I used it as a dip/sauce. I also did marinate my tofu with it and turned out really good.
I've been having this with almost everything lately since it goes so well with different flavours. The big batch I made lasted almost 2 weeks in the refrigerator so you can always have some stocked up in case you need a good sauce to go with your meals.

EASY CHIMICHURRI SAUCE
1 packed cup flat parsley leaves
5 garlic cloves, roughly chopped
1/4 cup red bell pepper, roughly chopped (optional)
3 tbsp Apple cider vinegar
1 tbsp maple syrup (or sweetener of choice)
1 1/2 tbsp nutritional yeast
1/4 tsp salt
3-4 tbsp olive oil
Process all the ingredients except the oil.
Slowly add in the olive oil while it’s processing until the chimichurri is smooth.
Store in an airtight container. You can store this for a week in the refrigerator.
