I simply sautéed fresh button mushrooms and seasoned them with balsamic vinegar and maple syrup (of course) along with a few other really basic ingredients.

Maple Balsamic Mushrooms
Good for 2-3 servings
450 g whole fresh button mushrooms, feel free to use other mushrooms like cremini
3 tbsp olive oil
1 white onion, thinly sliced
6 cloves garlic, minced
2 tbsp balsamic vinegar
1 tbsp maple syrup, adjust according to desired sweetness
Pinch of salt
2-3 tsp fresh rosemary, roughly chopped
Additional olive oil, for drizzling
Steps
Slice the mushrooms into half.
Heat a non-stick pan. Once hot, add in 3 tbsp olive oil. Add the onions and sauté over medium heat until tender, 4-5 minutes. Add in the garlic and sauté for another 2 minutes. Add in the mushrooms.
Cook over medium heat for 4-5 minutes, mixing occasionally. Pour in the balsamic vinegar. Leave to cook for another 5-6 minutes. Once the mushrooms are cooked, add in the maple syrup and mix well. Add a pinch of salt and then add in the chopped rosemary. Turn off heat.
Drizzle some more olive oil, if desired. Enjoy as a side, on toast, with salads, or as is!
