2 Super Easy 10-Minute Fried Rice Recipes (Vegan Recipes)

Let’s be real: there are days when you can’t really be bothered to make anything so these 2 super easy fried rice recipes are perfect for a quick and easy meal! You'll need 1 pan and 10 minutes (or even less)!

They’re super tasty and also a really good way to use up some leftover rice and veggies.

First up, Teriyaki Fried Rice! I love making my own really easy, homemade teriyaki sauce and storing it in the fridge until ready to use. It lasts me weeks, even months! I love the sweet and really savoury taste of teriyaki sauce since it really brightens up a dish!

I'll share my own homemade teriyaki sauce recipe below too!

Next is this this garlic turmeric fried rice is inspired by the Filipino ‘Sinangag' or garlic fried rice. It’s very aromatic from the garlic and is a beautiful yellow colour from the turmeric powder. The bell pepper is for a touch of extra flavour, and you can totally enjoy this by adding other veggies of your choice!

Garlic Turmeric Fried Rice

Good for 2-3 servings

This garlic turmeric fried rice is inspired by the Filipino ‘Sinangag' or garlic fried rice. It’s very aromatic from the garlic and is a beautiful yellow colour from the turmeric powder. The bell pepper is for a touch of extra flavour, and you can totally enjoy this by adding other veggies of your choice!

Ingredients

2 cups cooked and cooled rice (leftover is the best!)

3 tbsp oil

6 cloves garlic, minced

1 tsp turmeric powder

1/2 tsp salt, plus more to taste

1 small red bell pepper, diced (or whatever veggies you have, really)

Dash of pepper.

Spring onions, for garnish (optional)

Suggestion: You can use up whatever veggies you have for this recipe—whether fresh or frozen. Diced tofu would be a good addition too if you’re looking for some more protein!

Steps

  1. Heat a pan. Add in 3 tbsp oil. When hot, add in the minced garlic and salt. Sauté until garlic is lightly browned. Add in the turmeric powder. Mix then add in the bell pepper. Feel free to add other veggies of choice or even tofu!

  2. Cook until veggies are tender then add in the rice. Mix well and season with more salt to taste and pepper, if desired. Top with some chopped spring onions (optional).

Teriyaki Fried Rice

Good for 2-3 servings I love making my own really easy, homemade teriyaki sauce and storing it in the fridge until ready to use. It lasts me weeks, even months! I love the sweet and really savoury taste of teriyaki sauce since it really brightens up a dish! Ingredients 2 cups cooked and cooled rice 2 tbsp sesame oil or other oil, for cooking 1/4-1/3 cup homemade or store-bought teriyaki sauce* (easy homemade recipe below)* Salt and pepper, to taste Sesame seeds and chopped spring onions, for topping *Note: feel free to adjust the sauce depending on how flavourful you want it!

Veggies (totally up to you!) Chopped cabbage (or other veggies of choice) 1 cup frozen corn, carrots, and pea mix 1/4 cup corn*

Steps

  1. Heat a pan. Pour in 2 tbsp oil.

  2. Sauté the cabbage and other veggies of choice. Cook until tender. Mix in the rice.

  3. Pour in the teriyaki sauce and cook for 2-3 minutes. Season with salt and pepper to taste, if needed.

  4. Turn off heat and enjoy while hot! Garnish with some sesame seeds and spring onions, if desired.

Homemade Teriyaki Sauce

Makes around 1 cup 1/2 cup low sodium soy sauce* 1/2 cup water 1/3 cup + 1 tbsp coconut sugar (or other sugar of choice) 1/2 tsp minced ginger 1 tsp minced garlic 1 tbsp cornstarch + 2 tbsp room temperature water *Note: If you have regular soy sauce, feel free to lessen to 1/4 cup and taste as you go since it can get a little salty if using regular soy sauce.

Steps

  1. In a bowl, mix the corn starch and water.

  2. Add in the rest of the ingredients. Mix.

  3. Pour the mixture into a saucepan and leave to boil, stirring occasionally.

  4. Leave to simmer until the sauce thickens from the cornstarch, around 7 minutes.

  5. Turn off heat and set aside to use for the fried rice or other dishes. I store mine in a bottle and store it in the refrigerator for future use.
