CINNAMON.
Super fluffy cinnamon pancakes.
One bowl.
7 ingredients.
I absolutely love the flavour of cinnamon and having these pancakes along with some maple syrup and fresh fruit was just so good.
I worked with my fluffy pancake recipe, tweaked it (to make it even fluffier), and added in some cinnamon.This recipe is super easy, and only requires one bowl and one pan! I cook my pancakes on a non-stick pan so I no longer needed to add any oil.

SUPER FLUFFY CINNAMON PANCAKES
DRY
1 1/2 cups all purpose flour
1 1/2 tbsp baking powder
2 tbsp coconut sugar
1 1/2 tbsp cinnamon powder
1/8 tsp sea salt
WET
1 1/2 cups soy milk
3 tbsp canola oil
In a bowl, mix all the dry ingredients together.
In the same bowl, add in the soy milk and canola oil.
Mix well until well incorporated. The batter will be a little thick.
Heat a non-stick pan, add in around 1/3 cup of the batter (depending on the size you want).
Flip once the pancakes starts to bubble, around 3 minutes. Cook on the other side for another 2-3 minutes.
Serve with your favourite fruits and maple syrup or some chocolate ganache.
