Easy Saucy Ramen Noodles (Vegan Recipe)

Who wants a bowl of this easy saucy ramen noodles? These are so easy to make and oh-so satisfying!

These are already so good as is but you can also of course opt to mix in some tofu or veggies of your choice! I'll share the full recipe below!

Easy Saucy Ramen Noodles Good for 2 servings


Really easy and satisfying noodles with a flavourful sauce! You can also add in some veggies and tofu of your choice to these noodles. And if you'd like it extra saucy, you can double the sauce to go with your veggies and tofu. Enjoy! ​2 (70g each) uncooked ramen “bricks” or other noodles of choice Spring onions and sesame seeds, for topping

Sauce (you can double this if you're using more noodles and adding some veggies or tofu for really saucy noodles!)

1/2 cup room temperature vegetable broth or water 3 to 4 tbsp soy sauce, adjust according to desired taste 1.5 to 2 tbsp corn starch* 2 to 3 tbsp maple syrup, adjust according to desired sweetness 1 tbsp lemon juice or sub rice vinegar, adjust according to desired sourness 1/4 tsp ground pepper 1/2 tbsp sesame oil


Note:

*If using less soy sauce and liquid sweetener, start with 1.5 tbsp corn starch

STEPS

  1. Mix all the sauce ingredients until well incorporated. Boil water. Add in the ramen or other noodles of choice and half cook or cook until chewy.

  2. While the noodles are cooking, heat a pan. Sauté veggies or tofu, if using. Add in the sauce. Leave to simmer over medium heat.

  3. Add in the noodles and mix in the sauce* (see notes). Cook over medium high heat until the noodles absorb some of the sauce and sauce thickens.

  4. Garnish with sesame seeds and spring onions, if desired. Enjoy immediately while hot!


Note:

*I transferred the noodles directly from the pot of water to the pan so if you're using drained noodles and find them a bit dry, feel free to add 1/4 cup of water or more, as needed.
